Assorted bell peppers stuffed with quinoa and turkey sausage

Recipe Ingredients for Quinoa Stuffed Peppers

6 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 cup (8 fl oz) Water
1 cup Quinoa
1 tsp Bouillon
3.9 oz Sweet Lean Italian Turkey Sausage
3 tsp Garlic
1 serving Tomatoes, Crushed, Canned
6 tbsp Parmesan, Grated Cheese

Recipe Directions for Quinoa Stuffed Peppers

  1. Cook the peppers in the microwave for 5 minutes.

  2. Combine water, quinoa and bouillion in a medium saucepan and bring to a boil. Reduce heat to low and cook until the water is absorbed (15-18 min)

  3. Remove casing from sausage links, ccok the sausage with the garlic over medium heat until the sausage is cooked through. Stir in cooked quinoa and tomatoes with the juice.

  4. Spoon the mixture into the peppers and top wiith 1 Tbsp cheese each. Bake for 15 minutes or until the the cheese is melted.
