Recipe Ingredients for Quinoa Stuffed Peppers

1 cup Quinoa
2 cups water
6 medium Peppers, Sweet, Green
1 medium onion
8 oz mushrooms
2 tablespoons canola oil
28 oz canned diced tomatoes
2 cloves garlic
12 oz salsa
1/2 oz cooking wine
6 oz shredded reduced fat mozzarella cheese

Recipe Directions for Quinoa Stuffed Peppers

  1. Preheat oven 325.

  2. Cook quinoa following directions on box.

  3. Cut off tops of peppers and remove seeds and veins. Steam lightly the peppers.

  4. Saute the onion and mushrooms in butter. Reserve the juice of the tomatoes and to onions and mushrooms. Add garlic and salsa. Cook over medium for 10 mins. Add sherry and simmer for 10 more mins.Fold in quinoal.

  5. Place peppers in baking dish. Fill each pepper with mixture. Thin remaining mixture with left over tomato juices and pour around the peppers in the baking dish. Sprinkle with cheese. Bake 325 for 30-35 mins.
