Uses 1/4 cup parmesan cheese (12 tsp = 4 T. 2 tsp = 5 g. )

Recipe Ingredients for Quinoa Stuffed Peppers

2 large green bell pepper
1/4 cup dry quinoa
1/4 cup chopped onion
4 oz no-salt added tomato sauce
30 g. grated parmesan cheese
1 clove garlic, pressed
1/4 tsp dried parsley
1/4 tsp dried thyme
1/4 tsp dried oregano
1/4 tsp black pepper

Recipe Directions for Quinoa Stuffed Peppers

  1. Cook quinoa. Boil pepper halves for about 5 minutes. (at the same time? same pot?)

  2. Mix all ingredients (except pepper).

  3. Stuff ingredients into pepper halves.

  4. Bake at 325 for about 20 minutes (until tender)
