Red peppers stuffed with lean ground turkey breast, quinoa, and veggies.

Recipe Ingredients for Quinoa Stuffed Peppers

4 red peppers
8 oz ground turkey breast
1 slice whole grain bread
1 egg
1 egg white
1/2 cup zuccini
10 grape tomatoes
1/2 cup quinoa
1/2 tsp salt
1/4 tsp pepper

Recipe Directions for Quinoa Stuffed Peppers

Cook quinoa according to package directions. Dice zucchini, bread, and tomatoes. Mix ground turkey, eggs, vegetables, cooked quinoa, bread, salt and pepper. Cut the tops off of peppers and remove seeds and ribs. Cut bottom of peppers so that they are stable on sheet pan. Fill stuffing mixture into peppers and place on baking sheet. Bake at 350 degrees for 45 minutes.
