Recipe Ingredients for Quinoa Stuffed Peppers

1 cup quinoa, raw
6 bell peppers
3 tablespoons olive oil
1 cup onions, chopped
3 garlic cloves, minced
1 1/2 teaspoons cumin, ground
1 1/2 teaspoons coriander, ground
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1 cup carrots, diced
3/4 cup celery, diced
1 cup zucchini, diced
1 1/2 cups corn
2 cups cheddar cheese

Recipe Directions for Quinoa Stuffed Peppers

  1. Preheat the oven to 400. Lightly oil a baking pan.

  2. Place quinoa in a fine-mesh sieve and rinse well under running water. Bring quinoa and 2 cups water to a boil in a covered pot. Lower heat and simmer for about 15 minutes, until quinoa is soft and the water is absorbed.

  3. Cut the peppers in half lengthwise and seed them, leaving the stems on. Brush shells with about 2 tablespoons of the oil, inside and out. Place them cut side down on the baking pan and roast for 15-20 minutes, until softened and slightly browned, but not collapsed. When the bell peppers are roasted, reduce the oven to 350.

  4. In a skillet, warm the remaining oil and sauté the onions and garlic on medium heat for about 5 minutes, until softened. Stir in the spices and remaining ingredients except the cheese. Cover the pan and cook for about 10 minutes, until the vegetables are tender.

  5. Combine the vegetables and quinoa; spoon into pepper shells. Sprinkle with the grated cheese and bake for 10-15 minutes, until the cheese is melted.
