I've made much more filling than peppers. That's why, in order to have the nutrition facts for 1 pepper, I had to log as if I've made ten stuffed peppers.

Recipe Ingredients for Quinoa Stuffed Peppers

10 Green peppers
3 cloves Garlic
1 medium Onion
3/4 cup Quinoa
1 can Pink Salmon
1 tbsp olive oil
1 pinch salt
1 pinch pepper

Recipe Directions for Quinoa Stuffed Peppers

  1. Rinse 3 times the quinoa.

  2. Cook it for 30 minutes.

  3. Empty the peppers and cook them in the oven for 35 minutes.

  4. Saulte the onion and the garlic. Set aside.

  5. When the quinoa is ready add it to the onions, also the salmon. Mix well.

  6. Add salt and pepper
