Recipe Ingredients for Quinoa stuffed peppers

4 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
2 cloves, raw Garlic
1 medium (2-1/2" dia) Onions
0.75 cup Quinoa
1 medium Squash, Summer, Zucchini, Includes Skin
2 tbsp Extra Virgin Olive Oil
5 oz Mushrooms
28 oz Crushed Tomatoes
1 tbsp Tomato Paste

Recipe Directions for Quinoa stuffed peppers

  1. Cook mush. On, garlic and olive oil. Then add zucchini, mix cooked quinoa and tomato products together. Salt to taste

  2. , stuff peppers bake 375 20 min or until browned
