0.5 cup Quinoa
1/2 cup Diced Tomatoes with Sweet Onions
1 oz Monterey Jack Cheese
0.5 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green

Recipe Directions for quinoa stuffed pepper

Cook Quinoa, combine with grated cheese and 1/2 of the tomatoes. stuff pepper with quinoa mixture. put remaining tomatoes in casserole and place peppers on top. bake 30 min.
