Green peppers stuffed with quinoa, chicken sausage, onion and pepper

Recipe Ingredients for Quinoa Stuffed Green Peppers

1 serving Sweet Italian Style Chicken Sausage
1 serving Sweet Italian Style Chicken Sausage
1 serving Sweet Italian Style Chicken Sausage
1 medium (2-1/2" dia) Onions
5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green

Recipe Directions for Quinoa Stuffed Green Peppers

  1. Preheat oven to 350 degrees

  2. Cook 1 cup dry quinoa according to package instructions.

  3. Heat 2 tbsp EVOO in pan, add chicken sausage and cook through.

  4. Chop 1 medium onion and 1 green pepper, sautee in 2 Tbsp EVOO

  5. Cut top off of 4 green peppers, clean out inside of peppers and place in a baking dish coated with cooking spray.

  6. Mix together all ingredients

  7. Stuff peppers with filling

  8. Cover with aluminum foil and cook for 1 hour
