Bell peppers stuffed with quinoa, chicken sausage, mushrooms, onions, and craisins. Mix it up with different flavors of sausage and by adding different veggies and herbs, such as cilantro.

Recipe Ingredients for Quinoa Stuffed Bell Peppers

1 medium raw Bell Pepper Green
1 medium raw(119 g) Bell Pepper Red
1 medium Yellow Hothouse Bell Pepper
0.5 cup Quinoa
1 oz Mushroom Caps
0.33 small Onions
2 serving Sausage

Recipe Directions for Quinoa Stuffed Bell Peppers

  1. Combine quinoa with 1 cup of water, bring to a boil. Reduce heat, cover, and cook 15 additional minutes.

  2. In a separate pan, strip skin from sausage, brown sausage, add chopped onions and muschroom caps. When cooked and soft, add mixture to cooked quinoa. Fold in craisins.

  3. Add mixture to hollowed out bell pepper.

  4. Bake at 350 degrees for 20 to 45 minutes, depending on the tecture you prefer for your bell peppers (longer = softer, shorter = firmer).
