Quinoa and veggie stuffed bell pepper

Recipe Ingredients for Quinoa stuffed bell pepper

1 medium raw Bell Pepper Red
0.13 cup Quinoa, Organic
1 cup Spinach
0.5 cup pieces Mushrooms
1 tbsp Olive Oil
1 cup Organic Vegetable Broth
0.25 cup slices Carrots
1 tbsp Sweet Red Chili Sauce
1/4 tsp Sea Salt

Recipe Directions for Quinoa stuffed bell pepper

  1. Rinse quinoa well, soak for 15 minutes and drain and rinse again. Boil in broth for 30-40 minutes.

  2. Saute the carrots, mushrooms, and spinach in olive oil and salt. Flavor with black pepper and cayenne pepper.

  3. Mix veggies and quinoa, cut tops off of bell peppers, and stuff. Bake 30 - 40 minutes at 400*F.

  4. Top with sweet chili sauce.
