Recipe Ingredients for Quinoa Stuff Peppers - Mexican Style

1 cup Quinoa
4 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
0.5 cup, chopped Onions
2 tomato Tomatoes, Red, Ripe
4 oz Mexican Four Cheese 2% Milk
28 oz Enchilada Sauce
14 oz Beans Black
3.993 oz Mild Diced Tomatoes and Green Chilies

Recipe Directions for Quinoa Stuff Peppers - Mexican Style

cook onion and quinoa in 2 cups of water for 5 minutes, covered. Remove from heat and let steam for 15 minutes. Add 3/4 tsp ground cumin, 1/4 tsp cayenne pepper. Mix quinoa, beans, chopped tomatoes, green chilis and 1/4 cilantro. Seed and stem peppers. Microwave for 2-3 minutes to soften. Stuff with quinoa mixture and place in 9X13 pan. Cover with enchilada sauce and cheese. Bake 25-30 minutes at 375, covered in foil. Remove foil and bake 5 minutes mores.
