Recipe Ingredients for Quinoa Stirfry

1 1/2 cups quinoa
1 grapefruit
1 tbsp olive oil
1/4 cup almonds
1/4 cup walnuts
1 tbsp flax
1/3 cup dried cranberries
1 bulb fennel
1 onion
3 cups bok choy

Recipe Directions for Quinoa Stirfry

  1. Cook quinoa with a little salt and set aside.

  2. Chop nuts, separate bok choy stalk from greens, then chop finely.

  3. Supreme grapefruit over a bowl to catch the juice, then chop wedges into thirds.

  4. Chop and lightly stirfry (2-3 minutes) onion and fennel in olive oil. Add bok choy greens until wilted (1 minute).

  5. Add chopped nuts, cranberries and bok choy. Stirfry just enough to coat with oil.

  6. Add prepared grapefruit and flax.
