Quinoa, spinach, craisins, nuts and goat cheese

Recipe Ingredients for Quinoa Spinach Salad

1 cup cooked quinoa
1 red bell pepper, chopped
1/2 medium onion, chopped
2 cups spinach, chopped
1/4 cup slivered almonds, toasted
1/4 cup Goat Cheese
1 T. lemon juice
1 t. olive oil
1/4 cup dried cranberries

Recipe Directions for Quinoa Spinach Salad

  1. Cook 1/2 cup dried quinoa in 1 cup water. Cook according to package directions, about 10 minutes. Pour into a mixing bowl and refrigerate until cold.

  2. Heat small skillet over medium heat. Add 1 t. olive oil and onions. Cook until translucent. Combine remaining ingredients together and serve cold.
