This dinner makes a fantastic side, or a lovely main dish. Quinoa is a filling and very nutritious grain, which is the only vegetable perfect protein.

Recipe Ingredients for Quinoa and Spinach Quick and Filling Hot Dinner

1 1/2 tomato, diced
1/2 cup quinoa, cooked
1 1/2 cup frozen spinach
1/3 cup pacific foods tomato soup
2 tsp olive oil, heat oil, add all ingredients and simmer

Recipe Directions for Quinoa and Spinach Quick and Filling Hot Dinner

  1. Cook the Quinoa the same way that rice is cooked, only at lower heat and for a shorter period of time. Use 2x water for the amount of Quinoa. You can also use a rice cooker.

  2. Dice the tomato

  3. Heat the oil and then add the tomato and frozen spinach, simmer at a low heat until the spinach is thawed.

  4. Add the cooked Quinoa, tomato soup and any other spices you wish. Sliced almonds make a good choice.

  5. The dish is delicious hot or cold and can be kept in the refrigerator for 3 days. Heats easily in a microwave.

  6. Heat and serve.
