Recipe Ingredients for Quinoa with Spinach & Chickpeas

0.5 oz Extra Virgin Olive Oil
1 cup dry Quinoa
1 medium raw Onion Yellow
3 clove Garlic
1 tsp Coriander Leaf, Dried
1 tsp Cloves, Ground
1/4 tsp Sea Salt
12 oz Chick Peas
12 oz Frozen Spinach

Recipe Directions for Quinoa with Spinach & Chickpeas

cook quinoa per package directions. warm olive oil in large saucepan, add onion and garlic and let sweat until onion is transparent. drain and rinse can of chickpeas, add to saucepan, stirring occasionally. add fresh or frozen spinach to saucepan, stirring occasionally until well mixed. keep on low heat for 10 minutes, stirring occasionally. stir in spices of your choice (I use ground cloves, coriander, black pepper). Serve over warm quinoa. Sea salt to taste.
