Recipe Ingredients for Quinoa Sopa Seca

1 tbsp. olive oil
1/2 c. green onions, sliced
1 cup red bell pepper, diced
1 tsp. dried oregano
2 tbsp. garlic, minced
1 cup quinoa
1/2 tsp. sea salt
1 cup tomatoes

Recipe Directions for Quinoa Sopa Seca

  1. Warm oil in saute pan over medium heat

  2. Add onions and peppers and cook until soft - 5 min

  3. Add oregano and garlic and cook for 30 seconds

  4. Add quinoa and 2 cups of water and salt

  5. Bring to a boil, reduce heat and cover about 12 minutes

  6. Turn off heat and add tomatoes.
