Quinoa with Shrimp, capers and tomatoes in a lemon olive oil dressing

Recipe Ingredients for Quinoa Shrimp Salad

1 cup Quinoa, uncooked
2 cups water
12 ounces shrimp, boiled, tails removed
2 tablespoons capers
1 cup grape tomatoes
1/4 cup basil, fresh, chopped
2 tablespoons scallions, thinly sliced
2 tsp lemon juice
1 tsp lemon zest
3 tablespoons olive oil
1/4 tsp salt
1/8 tsp pepper

Recipe Directions for Quinoa Shrimp Salad

  1. Boil the 2 cups of water.

  2. Add the Quinoa, lower heat to a simmer and cover to cook about 12 minutes or until water is absorbed.

  3. Halve the grape tomatoes.

  4. When the Quinoa is cooked mix it with the shrimp, capers, tomatoes, basil, and scallions.

  5. Combine the Lemon Juice, lemon zest, olive oil, salt & pepper and whisk it together.

  6. Pour over the quinoa mixture and gently toss to coat.

  7. Chill well before serving.
