Recipe Ingredients for Quinoa Shirazi Salad

1 cup uncooked quinoa
2 cups chopped cucumber
1/2 cup parsley
1/4 cup red onion
1/4 cup extra virgin olive oil
2 tbsp lemon juice
1/4 tbsp black pepper
2 cups tomato chopped

Recipe Directions for Quinoa Shirazi Salad

Cook quinoa according to package directions. Allow to cool. chop cucumber, parsley, onion and tomato. Mix together with evoo, lemon juice and black pepper. Add vegetable mix to quinoa. Serve warm or cool.
