Recipe Ingredients for Quinoa Salad (WLM)

1 cup (dry) (uncooked) Quinoa Organic Grain
0.5 cup Raw Sunflower Nuts All-Natural
2 tbsp Olive Oil
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
3 cloves Garlic
4 medium (4-1/8" long) Onions, Spring Or Scallions
0.5 tsp Spices Crushed Red Peppers
1 medium Squash, Summer, Zucchini, Includes Skin
2 stalk, large (11"-12" long) Celery
1 lime yields Lime Juice

Recipe Directions for Quinoa Salad (WLM)

  1. Saute veggies (except zucchini) in olive oil.

  2. Add sunflower seeds after 4 minutes.

  3. Do not overcook - you want them to be crunchy.

  4. Add prepared quinoa.

  5. Sprinkle with red pepper flakes.

  6. Squeeze with lime juice.

  7. Refrigerate for at least 3 hours.

  8. Enjoy.
