Nice salad - very tasty and nutritional

Recipe Ingredients for Quinoa Salad w/ Toasted Almonds

1/4 cup Slivered Almonds
0.5 cup Quinoa
4 1tsp Olive Oil
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
2 clove Garlic
5 slice, thin Onions
1 cup, pared, chopped Cucumber, Peeled
2 stalk, medium (7-1/2" - 8" long) Celery

Recipe Directions for Quinoa Salad w/ Toasted Almonds

Toast almonds. Saute garlic, onion, pepper in 2t oil til soft. Add quinoa and 1c water. Simmer til tender. Stir in everything. Add fresh thyme and lime juice if desired.
