Recipe Ingredients for Quinoa salad

1/2 cup Balsamic Vinegar
1/4 cup Extra Virgin Olive Oil
2 T Dijon mustard
1 1/2 cups quinoa
5 Roma Tomatoes, chopped and seeded
3 cups canned black beans, rinsed and drained
1/2 t salt
1 cup avocado, diced

Recipe Directions for Quinoa salad

  1. Make dressing by combining vinegar, mustard, and olive oil.

  2. Add quinoa to three cups of boiling water. Boil for 10 minutes. Drain and press to remove excess water.

  3. Dice tomatoes and avocado and add to quinoa. Add black beans. Mince parsley and sprinkle on salad.

  4. Add dressing and toss.
