Delicious cold salad of quinoa, cucumbers, scallions and olives with a light vinaigrette.

Recipe Ingredients for Quinoa Salad

2 cups Organic Quinoa
1 3/4 cup Water
1/4 cup Lemon Juice
1 teaspoon Sea Salt
1/2 Cucumber
20 Olives
1 Scallion5 Ounces Organic Pinto Beans
5 ounces Organic Kidney Beans
5 ounces Organic Black Beans
1/8 cup Lemon Juice
1 tablespoon Olive Oil
1 tablespoon Red Wine Vinegar

Recipe Directions for Quinoa Salad

  1. Add first 4 ingredients to rice cooker and prepare on quick rice setting.

  2. Meanwhile, finely chop the cucumber, olives and scallion. Toss vegetables with the beans (drained and rinsed) and the juice from 1 lemon (about 1/8 cup). Dress with the olive oil and vinegar.

  3. When the quinoa finishes cooking, add to the vegetables and beans and mix well. Chill and serve as a cold salad. I like to use this as a filling for a wrap.
