Quinoa Salad Recipe

With a bit of a kick and a mexican flare this is the best tasting Quinoa salad I've every had.

Recipe Ingredients for Quinoa Salad

1 1/2 cups uncooked quinoa
4 cups chicken broth
15 oz can black beans
1 1/2 tablespoon balsamic vinegar
1 tsp juice from pickled jalapenos
1 1/2 cups cooked corn
1/2 red bell pepper
1/2 jalapeno chilies
1/2 cup green onions, chopped
3 cloves garlic, chopped
1/4 cup finely chopped fresh cilantro
1/4 cup lime juice
1 tsp salt
1 1/4 teaspoons ground cumin
2 tablespoons olive oil

Recipe Directions for Quinoa Salad

  1. 1.Rinse quinoa thoroughly for 3-4 minutes.

  2. 2.Bring chicken broth to a boil. Add quinoa and reduce to a simmer. Cook covered for 15-20 minutes or until all liquid is absorbed. Remove from heat and allow to cool. (Or you can try this method in my quinoa cooking tips)

  3. 3.In a separate bowl, toss beans, vinegar, jalapeno juice and salt and pepper to taste.

  4. 4.When quinoa is cool, combine quinoa, beans, corn, pepper, jalapenos, green oninons, garlic and coriander. Toss well.

  5. 5.Make dressing by whisking together lime juice, salt, cumin and oil. Pour over quinoa mixture.

  6. 6.Serve at room temperature.
