Recipe Ingredients for quinoa salad

1 cup quinoa
1 red pepper chopped
1/2 red onion, thinly sliced
1 cup corn
4 green onions, sliced
1 1/2 cup grape tomatoes - sliced in 1/2 or 1/4's
3 tbsp olive oil
2 tbsp white wine vinegar
2 tsp honey
1/2 tsp curry
1/4 tsp cumin
1/4 cup cilantro (optional)

Recipe Directions for quinoa salad

  1. cook quinoa in boiling water 15 min, drain and let rest in covered pot 15 min

  2. mix quinoa, veggies and cilantro in bowl

  3. mix well oil, vinegar, honey and spices, salt and pepper to taste

  4. mix dressing with quinoa & veggies
