Recipe Ingredients for Quinoa Salad

0.5 cup Couscous, Dry
0.25 cup Quinoa
1.5 cup Organic Chicken Broth
1 medium raw Onion Red
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
0.25 cup Lime Juice
1 large raw Zucchini
1 tbsp Extra Virgin Olive Oil
1 serving Garlic Cloves

Recipe Directions for Quinoa Salad

  1. Rinse quinoa in water- drain

  2. In saucepan simmer couscous and quinoa in broth over low-med heat. When liquid has evaporated remove from heat and set aside

  3. Brush onion and pepper lightly with olive oil. Either in oven or non-stick skillet, place skin side down. Heat until skin blisters. Drizzle with lime juice and flip, adding zucchini, about 5 minutes

  4. Mix all ingredients together with garlic. Salt and pepper to taste.
