Light salad modified from an Eat Clean recipe

Recipe Ingredients for Quinoa salad

2 tsp Classic Dijon Mustard
1 serving VIGO EXTRA VIRGIN OLIVE OIL
2 tbsp Vinegar red wine
1 lime yields Lime Juice
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 tbsp Parsley
2 clove Garlic

Recipe Directions for Quinoa salad

  1. cook quinoa in 3 cups water

  2. mix together all other ingredients except tomato and onion.

  3. chop tomato and onion

  4. combine everything including cooked quinoa

  5. chill
