1 cup quinoa, dry
1 1/4 cups chicken broth, low sodium
1/2 cup green pepper, chopped
4 mushrooms, sliced
1/4 cup cilantro
2 tbsp. basil
1/4 cup lemon juice
1 tbsp. olive oil

Recipe Directions for Quinoa Salad

boil quinoa in chicken broth. chop and add balance of ingredients. Let marinate for a couple of hours. Serve room temperature or cold.
