Cold quinoa with cucumber and mint

Recipe Ingredients for Quinoa salad

1 cup Quinoa
2 cups water
1/2 cup lemon juice
1/4 cup olive oil
1 cup parsley, chopped
2 tablespoons fresh mint, chopped
1 cup cucumber, chopped
1 cup tomato, chopped

Recipe Directions for Quinoa salad

Cook quinoa in water until tender. Let cool. Add lemon juice and olive oil. Mix well. Add remaining ingredients and toss well. Serve chilled.
