Recipe Ingredients for Quinoa Salad

3/4 cups plain yogurt (Greek)
3 T. reduced fat mayonnaise
1 cup cooked quinoa, cooled
1 Granny Smith apple, diced
1/2 cup celery, chopped
1/2 cup dried cranberries
1/4 cup grapefruit, segments, optional
1/2 c. chopped pecans, optional

Recipe Directions for Quinoa Salad

  1. Cook quinoa according to directions and let cool.

  2. Add remaining ingredients to cooled quinoa.

  3. Refrigerate until ready to serve.
