Stolen from a similar recipe using couscous in Cooking Light

Recipe Ingredients for Quinoa Salad

1 T olive oil
1/2 c diced red onion
1 c quinoa
1 c chicken broth
1 T parsley
1 T basil
1 T tarragon
1 T lemon juice
1 c grape tomatoes

Recipe Directions for Quinoa Salad

  1. Saute onions in olive oil for 2 minutes.

  2. Add quinoa and saute 1 min.

  3. Add broth and cook until quinoa is soft

  4. Let sit 2 minutes

  5. Fluff and add remaining ingredients
