Cold Salad made with Quinoa and veggies

Recipe Ingredients for Quinoa Salad

1 cup quinoa
1/4 cup broccoli, cut into small florets
1/4 diced zuchinni
1/4 cup diced tomato
1/8 cup diced celery
1/8 cup diced onion
2 cups water
4 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp grainy mustard
1 salt
1 pepper

Recipe Directions for Quinoa Salad

  1. cut veggies into 1 cm dice (you can use whatever veggies you have, just don't add the tomatos or any leafy veggies until the end)

  2. cook quinoa according to preparation instructions in a med saucepan (generally 2:1 water to quinoa, boil for 10-15 minutes) - include any hard veggies when you are cooking the quinoa

  3. remove from heat when quinoa is transparent, with a white ring around the edge

  4. stir in any soft veggies at this point (diced tomatoes, spinach, fresh herbs, etc)

  5. Let cool in the fridge for atleast an hour

  6. Mix dressing: Olive oil, balsamic vinegar, grainy mustard and salt and pepper, and fold into quinoa mixture

  7. let stand in fridge for a few hours so the quinoa will absord the dressing.
