This is my twist on a recipe by Ellie Krieger on the FoodNetwork website. It originally calls for wheat berries in place of quinoa. I had to improvise a bit but this has become one of my favorite light lunches!

Recipe Ingredients for Quinoa Salad

1 cup quinoa
3/4 cup chopped walnuts
3 stalks celery, finely chopped
1/2 cup dried cranberries, chopped
2 scallions, finely chopped
1 1/2 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice

Recipe Directions for Quinoa Salad

  1. Cook quinoa according to package directions and let cool.

  2. Toast the walnuts in a dry skillet on medium-high heat for 2-3 minutes, or until fragrant.

  3. In a large bowl, combine quinoa, walnuts, cranberries, scallions, celery, olive oil and lemon juice.

  4. Season, to taste, with salt and pepper.

  5. Side note: A splash of balsamic vinegar kicks up the flavor!
