Quinoa, pronounced keen-wah, is not a true cereal grain, but rather the botanical fruit of an herb plant. It is treated as a grain in cooking. The grains are small yellow flattened spheres, approximately 1.5 to 2 mm in diameter. When cooked, the germ coils into a small "tail" that lends a pleasant crunch.

Recipe Ingredients for Quinoa Salad

1 cup quinoa (cook according to directions)
1 cup raisins
1/2 cup pine nuts
1/4 cup chopped parsley
1/4 cup chopped scallions
1 red pepper (chopped)
1/4 cup honey
1/4 cup olive oil
1/2 tablespoon lemon juice
1 clove chopped garlic
1/4 teaspoon cumin

Recipe Directions for Quinoa Salad

Cook quinoa according to directions. Combine first six ingredients. Mix together dressing ingredients: honey, oil, lemon juice garlic and cumin. Pour dressing over and mix to coat. 1/2 cup serving
