Recipe Ingredients for Quinoa Salad - Greek inspired

1 cup Quinoa
2 cups water
1/2 cup cherry tomatoes
1/2 cup chopped cucumber
3/4 (186 g) chopped yellow pepper
1/4 cup chopped onion
50 approx 1/4 cup Feta cheese crumbles
2 tbsp lemon juice
2 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
1 freshly ground pepper
1/4 tsp garlic powder

Recipe Directions for Quinoa Salad - Greek inspired

  1. bring quinoa and water to a boil, cover plan and simmer for 10 - 15 minutes (15 minutes for high altitute) until all water is absorbed. fluff with fork.

  2. Add all other items and mix well, let cool for at least 1 hour. Serve chilled or at room temperature
