1/2 cup quinoa
3 tbsp shredded carrot
1/3 cup shelled edamame
1/3 cup dried cranberries
1 tbsp vinegar
1 tbsp olive oil
1 tsp dijon mustard
1 tbsp lemon juice

Recipe Directions for Quinoa Salad with Cranberries and Edamame

  1. Cook quinoa according to package instructions.

  2. Combine all ingredients plus 1 tsp lemon zest. Add salt and pepper to taste.

  3. Chill and serve.
