Quinoa with roasted vegetables and Moroccan spices

Recipe Ingredients for Quinoa with roasted vegetables

1 cup Quinoa
1 1/2 cup (8 fl oz) Water
2 tbsp Olive Oil
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
2 medium Squash, Summer, Zucchini, Includes Skin
1 3/4 cup Garbanzo Beans
1 medium raw Onion Red
1 1/2 tsp Fresh Blends Herb

Recipe Directions for Quinoa with roasted vegetables

  1. Cook the quinoa like rice (bring 1.5 c water to a boil with quinoa, simmer 15 mins, covered).

  2. Slice the zucchini and red pepper, toss in a roasting dish with 1 T olive oil, and roast at 450, turning occasionally, until done. Remove to a cutting board, chop up, and set aside.

  3. Chop the onion finely and saute over medium heat. Add the spice blend, stir, and cook for another minute or so before adding garbanzo beans. Give the beans time to warm up, then add the cooked quinoa and vegetables.
