Recipe Ingredients for Quinoa w/ Roasted Vegetables

1 cup quinoa
1 1/2 cups water
1 red pepper, diced
1 yellow pepper, diced
1/2 large onion, diced
1/2 cup asparagus, cut into 1 in. pieces
3 cloves garlic, minced
1 tsp salt
1/2 tsp pepper
3 tbsp olive oil
3 tbsp fresh lemon juice (approx. 1/2 lemon, squeezed)
2 tbsp balsamic vinegar
4 scallions, diced
16 basil leaves, julienned
1/4 cup reduced fat feta cheese

Recipe Directions for Quinoa w/ Roasted Vegetables

  1. Rinse quinoa with cold water, boil 1 1/2 cups water and add quinoa when water comes to a boil. Cover, let simmer for approx. 12 minutes, until most of water is absorbed. Set aside to cool.

  2. Toss vegetables, garlic, salt, pepper and olive oil. Roast at 425 degrees F for about 20-25 minutes. Set aside.

  3. Dice scallions and basil.

  4. Mix lemon juice with balsamic vinegar.

  5. Toss quinoa, vegetables, scallions, basil and lemon juice mixture, and combine well.

  6. Add feta cheese and serve.
