Recipe Ingredients for Quinoa Rissoto

2 cups Quinoa
1 cup Chicken Broth
4 oz gruyere cheese
1 tsp salt
1/2 onion
10 oz mushrooms
4 tbls clarified butter
2 garlic cloves
1 pinch paprika
1 pinch chili powder
1 3/4 cup water

Recipe Directions for Quinoa Rissoto

  1. Chop the onions

  2. Mince the garlic

  3. Chop the mushrooms into bite sized (1/4 inch) slices

  4. rinse Quinoa

  5. In a coverable saute pan heat 2 tablespoons of clarified butter. Add onions and cook for 3 minutes or until they start to become translucent. Add garlic and cook till you can smell it.

  6. Add the Quinua and Stock and bring to a boil for 3 - 4 minutes.

  7. Add water and 1/2 teaspoon of salt and bring to a boil again. Once this has happened cover and reduce to low heat. Cook till Quinoa opens up and liquid is gone.

  8. In a seperate saute pan heat two more tablespoons clarified butter. Add mushrooms and cover in butter, then add salt, paprika and chili powder and let cook till the mushrooms begin to brown and give off liquid. At this point stir until evenly browned.

  9. Remove from heat and and salt and crushed black pepper to taste.

  10. When quinoa is done stir in cheese till evenly melted. Put in bowl and cover with mushrooms and sauce.
