Recipe Ingredients for Quinoa Puttanesca

1 tablespoon olive oil
3 cloves garlic
1/4 teaspoon red pepper flakes
14 ounces crushed tomatoes
2 1/2 ounces spinach
3 serving Quinoa, cooked (cup)

Recipe Directions for Quinoa Puttanesca

  1. In large saucepan, heat olive oil over medium heat.

  2. Add chopped garlic and red pepper flakes. Cook, stirring, for 3 minutes, until garlic is golden brown.

  3. Add tomatoes and bring to a boil. Lower heat and simmer for 5 minutes.

  4. Add spinach and cook for another 5 minutes, until wilted.

  5. Turn off heat and stir in cooked quinoa, and serve.
