This is like rice pudding with bananas and made with quinoa. I use it for a breakfast food, instead of dessert!

Recipe Ingredients for Quinoa Pudding

1 1/2 c water
3/4 c quinoa
2 bananas
2 tbsp Splenda
1/2 tbsp butter
1 tsp vanilla extract
2 serving Silk Pure Almond unsweetened vanilla Milk

Recipe Directions for Quinoa Pudding

  1. rinse and drain the quinoa. Bring water and quinioa to a boil in a saucepan over high heat, stirring occasionally. REduce heat, cover, and simmer 15 minutes. REmove from heat.

  2. blend together milk, bananas, and sugar in bowl fo a blender or food processor until smooth. Pour milk mixture into saucepan with quinoa

  3. Place the pan over medium heat. Cook and stiruntil mixture becomes thick and creamy, 5-10 minutes. REmove from heat. STir in butter and vanilla and serve warm.
