A nice change from typical rice pudding. Each serving is just under 1 cup. A half serving is adequate and would reduce calories per serving to only 111 calories.

Recipe Ingredients for Quinoa Pudding

1 cup quinoa
2 cups water
2 cups apple juice
1 cup raisins
2 T. lemon juice
1 t. ground cinnamon
1 salt to taste
2 t. vanilla

Recipe Directions for Quinoa Pudding

  1. Rinse and drain quinoa thoroughly.

  2. Bring to a boil over high heat, then reduce heat and cover.

  3. Simmer until water is abosorbed and quinoa is tender, about 15 minutes.

  4. Add apple juice, raisins, lemon juice, cinnamon and salt.

  5. Cover pan and allow to simmer for 15 minutes longer.

  6. Stir in vanilla.
