Tender quinoa is simmered in apple juice and spiced with cinnamon. You can find cranberries dried in apple juice at Whole Foods.

Recipe Ingredients for Quinoa Pudding

1 cup quinoa
2 cups water
2 cups apple juice
1/2 cups raisins
1/2 cups dried cranberries
2 T. lemon juice
1 t. cinnamon
2 t. vanilla extract
1 salt to taste

Recipe Directions for Quinoa Pudding

  1. Rinse quinoa thoroughly.

  2. Place quinoa in a medium saucepan with water.

  3. Bring to boil over high heat.

  4. Cover pan with lid, lower heat, and simmer about 15 minutes.

  5. Mix in apple juice, raisins, dried cranberries, lemon juice, cinnamon and salt.

  6. Cover pan and allow to simmer for 15 minutes longer.

  7. Stir in vanilla.

  8. Serve warm.
