Recipe Ingredients for Quinoa and Pork Stuffed Bell Peppers

1 medium onion, finely chopped (1 cup)
2 tbs. olive oil
2 stalks celery
1 lb pork, ground
1 tbs. ground cumin
4 cloves garlic, minced
10 oz. frozen chopped spinach
30 oz. diced tomatoes, drained, liquid reserved
1 cup quinoa
3 large carrots, grated
8 oz Pepper Jack Cheese
4 large red bell peppers

Recipe Directions for Quinoa and Pork Stuffed Bell Peppers

  1. heat oil on medium, saute onions and celery for 3 minutes

  2. add pork, saute for 4 minutes

  3. add garlic and cumin, saute for 5 minutes

  4. add spinach, basil and tomatoes, cook until most of liquid is gone

  5. add quinoa and carrots and 2 cups of water/stock simmer for 20 minutes or until almost all of liquid is gone

  6. add 1 cup of cheese and stir

  7. stuff each pepper half with at least 3/4 cup of mixture

  8. bake at 375 for an hour in tinfoil

  9. add rest of cheese to top and bake for 15 more minutes or until golden

  10. or try 375 for 45 minutes, 375 without foil for 15 minutes, and 15 minutes on broil.
