Recipe Ingredients for Quinoa Pilaf

1 tbsp olive oil
1 onion
1 cup quinoa
2 cups vegetable broth
4 oz mushrooms

Recipe Directions for Quinoa Pilaf

  1. cook onion and mushrooms in olive oil.

  2. add rinsed and drained quinoa and stir to distribute evenly

  3. add vegetable broth and bring to a boil

  4. Reduce to a simmer, cover and cook until all the water is absorbed (about 15 minutes).

  5. You will know that the quinoa is done when all the grains have turned from white to transparent, and the spiral-like germ has separated. Makes 3 cups.
