Delicious mix of frozen vegg. and quinoa

Recipe Ingredients for Quinoa pilaf

3 c chicken broth
1 1/2 c quinoa,uncooked
2 cloves garlic
1/2 c edamame,frozen
1/2 c peas
1/2 c frozen vegetables(carrots,peas,green beans)
2 tbsp olive oil
2 tbsp lemon juice
1 c leeks,chopped
1/2 c peppers,red,chopped
2 tbsp parmesan cheese
1/4 tsp salt
1/4 c scallions,chopped

Recipe Directions for Quinoa pilaf

  1. Cook quinoa in 3 c of chicken broth

  2. Leave it covered and let it set for 15 min.

  3. In the meantime sautee all the veg. in olive oil

  4. When done - mix the quinoa and lemon juice, salt, and parmesan

  5. Yum!
