Recipe Ingredients for Quinoa Pilaf

2 tsp olive oil
1/4 cup leeks
2 garlic cloves, pressed
1 large carrot, diced
1/3 cup mushrooms
1 stalk celery, chopped
1 cup quinoa, thoroughly rinsed
2 tbs white wine
2 cups fat-free, low-sodium chicken broth

Recipe Directions for Quinoa Pilaf

  1. "Saute" veggies, starting with leeks, ending with mushrooms in olive oil and small amount broth.

  2. Rinse quinoa well, add to saute then add remaining broth, wine.

  3. Cook until tender, up to half hour.
