Pilaf that serves four as a main course or six as a side dish.

Recipe Ingredients for Quinoa Pilaf

2 tsp olive oil
1 cup onion, chopped
1 tsp turmeric
1 cup water
1/2 cup quinoa
1/2 cup cooked chick peas
1/4 cup pine nuts
1/4 cup raisins
1 red bell pepper, chopped
1 green bell pepper, chopped

Recipe Directions for Quinoa Pilaf

  1. Saute the onions in the oil on low heat. Cook until translucent. Add the turmeric and continue cooking, stirring constantly to prevent the spice from burning.

  2. Add the water (you can substitute vegetable stock if you prefer) and bring to a boil. Add the quinoa, making sure that all of the grain is submerged. Place the rest of the ingredients on top of the quinoa.

  3. Cover the pan and reduce the heat. Allow to simmer for 15-20 minutes, checking occasionally to ensure there's enough liquid in the pan to keep it from burning. Add a little more liquid if necessary.

  4. Stir before serving.
