Like rice pilaf but for those who are allergic to rice! Very Tasty!

Recipe Ingredients for Quinoa Pilaf

1 cup quinoa
1/4 cup Smart Balance
1/4 cup carrots, diced
1/4 cup celery, diced
1/4 cup sweet red peppers, diced
1/4 cup peppers, sweet, yellow, diced

Recipe Directions for Quinoa Pilaf

  1. Cook Quinoa in a small pan following directions on package

  2. Simmer butter or smart balance in seperate pan.

  3. Add in vegetables to buttered pan and let simmer until cooked.

  4. Add vegetables to Quinoa and let cool!
