Quinoa Pilaf Recipe

Based on a Turkish pilaf. Serving size is 1/2 cup

Recipe Ingredients for Quinoa Pilaf

1 t cumin seeds
3/4 t coriander seeds
1 T olive oil
1/2 medium onion, chopped
1/2 t salt
2 garlic cloves, minced
1/2 c quinoa, cooked (2 c cooked)
14 oz chickpeas
1/8 oz POM's pomegranate juice

Recipe Directions for Quinoa Pilaf

  1. Toast cumin and coriander seeds, then grind

  2. Saute onion in olive oil about 5 minutes

  3. Add garlic and salt for 30 sec, then add ground spices

  4. Stir in quinoa, chick peas and pomegranate juice (or 3 T fresh seeds.)

  5. Heat, serve with drizzle of juice, or more seeds.

  6. Serve with yogurt spiced with garlic.
